After recieving this e-mail I'm not so sure about going to field day again this year!
BOONE COUNTY HAMS,
I think we should all give Gary (K9LNX) A BIG Thanks for suppling some of the meat we will need for Field-Day . He droped off his 1st delevery at my house today and it sure looked healthy ,,,,,AND ALMOST HOUSE BROKE.
I have inclosed some starter recipes hopping you all can come up with some more
BBQ Raccoon
One 4 to 6 pound raccoon, cut into serving pieces
1 cup red wine
2 onions, sliced
3 bay leaves
1 tablesp**n salt
1 teasp**n pepper
3 cloves garlic, sliced
2 cups of your favorite barbecue sauce
1 tablesp**ns paprika
Place the meat pieces in a large pan. Add wine, onions, bay leaves, salt, pepper and garlic. Add enough water to cover the meat. Bring to a boil. Cover and simmer for 1 hour.
Place raccoon meat in a lightly greased baking dish. Mix barbecue sauce and paprika together and pour over the meat. Cook at 325 degrees for 50 to 60 minutes.
Crockpot Raccoon
2 dressed raccoon, cut into serving size pieces
1/4 cup soy sauce
1/4 cup water
1/4 cup firmly packed brown sugar
3 tablesp**ns lemon juice
1/4 teasp**n garlic powder
1/4 teasp**n ground ginger
Salt and pepper to taste
Place raccoon pieces into the crockpot. Mix all ingredients in a small bowl and pour over meat. Cover and cook on low heat for 7 to 8 hours.
If you like a thicker gravy, mix a little cornstarch in warm water, add to crock pot juice and cook on high until thickened. Salt and pepper as desired.
Racoon Meatloaf
2 pounds ground raccoon
1/4 pound pork sausage
1/2 cup chili sauce
1 cup tomato juice
1-1/2 teasp**ns salt
1 teasp**n pepper
2 tablesp**ns butter
1 cup bread crumbs
1/2 teasp**n thyme
1 medium onion, chopped
2 stalks celery, chopped
2 eggs
Mix all ingredients thoroughly in a large mixing bowl. Transfer to a buttered loaf pan. Bake at 350 degrees for 1 hour and 15 minutes or until juice runs clear. Serve hot with mashed potatoes
